BBQ Spiced Sirloin Steak with Green Beans & Confit Eshallots
Ingredients
- 6 x 200g Sirloin, portioned
- Luke’s BBQ spice
- 600g baby green beans, topped
- 60mls extra virgin olive oil
- 4 eshallot diced finely
- 3tbspn toasted almonds slivers
- Seasoning
Method
- In a large saucepan place the eshallots and extra virgin olive oil and cook slowly until tender. This will take up to 15 minutes
- In a pot of simmering water with salt in it, place the beans in. Cover with a lid and cook for about 5-6 minutes or until tender (do not overcook)
- Drain the beans in a colander and then place in a mixing bowl, add the shallot and oil, toasted almonds and mix. Season and reserve
- Pre-heat a grill to a hot/medium heat
- Season the pieces of sirloin with sea salt and freshly ground black pepper, and rub in the BBQ spice.
- Place the sirloin on the grill and cook to your desired degree, take off and rest for 2 minutes before serving.
- Add the green beans to a plate and place the steak to the side
